Ingredients
Biscuits
- 220 g low-gluten flour →get it here
- 84 g powdered sugar
- 26 g almond powder
- 18 g matcha powder
- 128 g cold butter, cubed
- 52 g egg liquid
Matcha Chocolate Filling
- 45 g whipping cream
- 20 g water
- 110 g white chocolate, chopped → shop here
- 30 g butter
- 4 g matcha powder
Instructions
Mix Dry Ingredients and Rub in Butter
- Mix sifted low-gluten flour, powdered sugar, almond powder and matcha powder until combined.
- Add cold butter cubes and rub until mixture looks like fine sand.
Add Egg and Shape Dough
- Add egg liquid, press and cut until dough comes together.
- Roll into a 3 mm sheet, freeze for 20 minutes.
- Cut shapes with your preferred cutter, place on baking mat.
Bake the Cookies
- Preheat oven to 160°C, then bake at 140°C for 20 minutes until edges firm.
- Cool completely before adding filling.
Make Matcha Chocolate Filling
- Bring whipping cream and water to a simmer.
- Pour over white chocolate, stir until melted and smooth.
- Add butter and matcha powder, mix until glossy.
- Cool slightly, transfer to piping bag, chill until thickened.
Assemble
- Pipe filling onto flat side of one cookie.
- Top with another cookie to form a sandwich.
- Let set briefly to firm up before serving.
